The handpicked fruit for this wine was whole bunch pressed and fermented with wild (vineyard Pied du Cuvee) yeast in 300 litre French hogshead barrels for 10 months (15% new oak). 15% was also fermented on the skins then added to barrel as well. The wine underwent 60% malolactic fermentation to add a rich creamy texture. A delicious and elegant wine it has beautiful lime, lemongrass and wild fennel aromas and taste. Barrel aging has created a fine structure and mineral texture with distinctive sea air notes. This wine will cellar well for several years to come.
