The handpicked fruit for this wine was whole bunch pressed and fermented with wild (vineyard Pied du Cuvee) yeast in 300 litre French hogshead barrels for 10 months (15% new oak). 15% was also fermented on the skins then added to barrel as well. The wine underwent 60% malolactic fermentation to add a rich creamy texture. A delicious and elegant wine it has beautiful lime, lemongrass and wild fennel aromas and taste. Barrel aging has created a fine structure and mineral texture with distinctive sea air notes. This wine will cellar well for several years to come.

Grapes were whole bunch pressed and fermented in French oak barrels for this complex rendition of the variety. The wine offers lively fruit notes together with subtle oak infusion, making it engaging and highly enjoyable.
